A mobile device has limited screen size so we prefer that you view the most needed folders and then access other, rarely used folders, upon demand.

On the other hand, users do have control over this. So:
Open Settings > Look and feel > Recent folder count > Adjust the number of displayed recent folders as required.

To add a folder in your list of recents open the Inbox > Open the pull-out menu on the left > Other folders.
